In the oil oil sector, an early harvest is a harvest that begins In October and many early harvests complete by November. The purpose of an Early Harvest is harvest the olives at their optimal phase of maturation. This period produces less oil per olive than when the olive is riper (more mature)—such as in December or January—but the flavours that olives produce in October and November are considered to be more pronounced.
Industry convention is that an Early Harvest costs more to perform but usually produces olive oils with more taste qualities, and therefore deemed higher in quality.
